We verify what kind of grasses and forage they eat too! All meats come from California ranchers whom we know personally.

HUMANE MEANS HEALTHY

All our Ranchers believe that natural is healthy because they know it works. Our cows don’t live in unsanitary stockyards and then get “finished” on grass for 3-6 weeks. They actually roam free in gorgeous fields and eat that delicious green stuff all their lives. They are treated with the utmost of care and respect and are never subjected to growth hormones, appetite enhancers or antibiotics. They grow at nature’s pace not ours. The result is incomparable, healthy, tender and delicious.

FRENCH CUTS

Part of the respect for the animal means valuing every part of its body. Centuries-Old French Butchery maximizes 90%-95% of the animal with unique cuts that American butchery tends to hack right through. We are equally skilled in American cuts, just ask us for your favorites. Our meats are dry-aged by French standards (never less than 21 days) and can be trimmed by request to your preference.
