I LEARNED UNDER THE OLD SCHOOL. We were not allowed to pick up a knife until we had watched and studied the master for eight months. Every slice meant money—either money earned or money lost.
We were taught appreciation for the animal that had given its life. It is a value I still hold today.
AT THE AGE OF 16, I was the youngest apprentice to pass the butcher’s certification from the local board. And by 19, I started managing a chain of 10 shops for the Italian family where I had apprenticed. A few years later I wanted to open my own store. I applied for a bank loan with nothing more than my word and a fistful of youthful confidence. And they gave it to me! I opened my very first shop in the local market and eventually owned two successful stores in Nice.
French cooking is considered among the finest in the world, and it all starts with the ingredients. Nowadays, when eating has practically become a health hazard, I am thrilled to be bringing the finest quality Grass Fed Beef and pastured meats from California Ranches to the L.A. food community and to help people understand what lean Grass Fed meats add to a healthy diet. I haven’t seen meat like this since the 1960’s. California meats and French Butchery. It’s a perfect marriage! This Flagship store is a “hybrid of excellence” and the only one of its kind in Southern California: an International Gourmet Market and a fully operative California farm-direct whole animal butchery all in one. Our products include:
- 100% Grass Fed and Pastured, non-GMO, hormone-free meats from all California farms–cut in-house
- Mouth watering sausages, merguez, pâtés, terrines and more–made in-house
- Locally sourced breads, pastas, jams and desserts–crafted by local artisanal food makers
Our commitment to bringing “healthy and delicious” to local neighborhoods is only one aspect of the Le FRENCH BUTCHER brand. We also sell wholesale to restaurants, caterers and chefs, have an e-commerce online store and offer classes for home chefs and passionate foodies. And as part of building the infrastructure to expand our brand, our 9-month long tuition-based Le French Butcher Certification Program trains young apprentices who want to make a career in butchery in every aspect of French Butchery and retail shop management.
